Fluffy Vegan Oat Pancakes

INGREDIENTS:

1 medium banana

1 cup unsweetened plant based milk (plus 1 tbsp more if batter becomes too thick)

1 tbsp apple cider vinegar

1 tsp vanilla extract

3 tbsp maple syrup

2 cups oat flour (finely ground rolled oats in a high speed blender)

1 tsp cinnamon

1 tsp baking soda

2 tsp baking powder

1/4 tsp sea salt




HOW TO:

  1. Add the vinegar to 1 cup of plant based milk. This mixture becomes like a vegan butter milk. Set aside while you get together dry ingredients.

  2. Combine oat flour, cinnamon, baking soda, baking powder, and sea salt.

  3. Mash banana, leave a little chunky

  4. Add milk/ vinegar, and maple syrup to mashed banana 

  5. Add dry ingredients to wet ingredients in bowl

  6. Let the batter rest for 5  minutes. It will be a little thicker than a normal pancake batter.

  7. Heat griddle or pan to medium heat. If it's not a nonstick pan be sure to add plant butter or oil to the pan before cooking

  8. Pour 2 spoonfuls making about 3 in. pancake onto the pan / griddle

  9. Cook for 2-3 minutes until the pancakes start to bubble around the outside. Flip and cook the otherside until golden brown

  10. Serve with topping of your choice - fruit, maple syrup, vegan butter, nut butter or whatever your heart desires.
